Salad is a year-round thing, and why not? It is tasty, you can have fun mixing and matching ingredients, and it's filled with healthy vegetables and fruit.
It's autumn, so the peak season for our favorite summer salad ingredients has passed. But how about the Autumn Roasted Vegetable Salad featured in the current issue of Natural Awakenings Chicago magazine? It has carrots, Brussels sprouts, red potatoes, purple onion, kale, apples and cheese (goat cheese preferred).
