The Evolved Network Teams with Vistro Prime for Dinner Fundraiser

Chef-Founder Sebastian White Pairs with Chef Paul Virant on August 5


The Evolved Network is a visionary Chicago non-profit that works to improve the lives of underprivileged youths through farm-to-table experiences. And Chef-Founder Sebastian White is teaming with Chef Paul Virant and his Vistro Prime restaurant in suburban Hinsdale for an August 5 fundraising dinner (6 p.m. to 9 p.m.) that sounds just spectacular.


I have been an admirer of Sebastian's work since we met in October 2022. He currently is working with students in several Chicago schools, providing food education and teaching cooking skills. His ultimate goal is to build a restaurant and urban food garden where he will provide young people from under-resourced communities with culinary, business and food growing skills.


Sebastian is also a clinical psychologist turned chef, and The Evolved Network plans to provide therapeutic services to program participants who need them.


Paul is a leader in his own right, a pioneer in Chicago's farm-to-table restaurant community. Along with Vistro Prime, he owns Petite Vie in suburban Western Springs and Gaijin in Chicago's West Loop neighborhood.


I have been to a number of Sebastian's fundraising dinners and they are always feasts, but the menu for this one is truly mind-blowing. Check it out in the graphic below.
