UI Extension Provides a Pretty Twist on the Usual Beet Recipes
Beets are highly nutritious, and many of us find them to be tasty, earthy treats. And if you go to a farmers market or other vendor where you can buy these root vegetables with their similarly tasty and healthy greens attached, it's like getting two vegetables for the price of one.
Beets turn up most often roasted, pickled or in salads (I recently posted about a delicious beet salad I prepared for a recipe by Chef Tigist Reda of Chicago's Demera Ethiopian Restaurant). But did you know you can make a yummy — and colorful — hummus with beets?
